Greek Omelette Recipe

Ingredients

  • 1 whole egg with 3 whites (women), 4-5 (men)
  • 1 handful fresh spinach
  • 40 gm fat free feta cheese crumbled
  • 2 tablespoons diced tomato

Directions

1. Spray pan with organic olive oil non-stick cooking spray and sauté spinach until wilted.
2. Add eggs, tomatoes and cheese, cover and cook until set.
3. If desired fold omelette in half.
