Zucchini Boats Recipe

Ingredients

  • 4 large zucchini
  • 250 grams lean turkey/chicken mince
  • 1-2 tbsp homemade taco seasoning
  • 1 tbsp water
  • 1/2 cup 4 bean mix
  • 1/2 cup salsa
  • optional: 1/2 cup shredded cheese

Directions

1. Preheat oven 180C
2. Brown and season meat with seasoning and water
3. Set aside
4. Slice easch zucchin down centre
5. Scrape out the centre flesh with a spoon
6. Spread beans, salsa and meat down centre, add optional cheese
7. Place on lined baking tray and bake 20 minutes

Top with avocado mashed in greek yoghurt with a little lemon juice

Variation: turkey, pumpkin, onion, ricotta, garlic yoghurt
